My day started great when i totally nailed my experimental omelette. Mixed in some adobo seasoning (mexican seasoned salt w garlic, and some other things), cilantro, pinch of oregano, a bit of hot sauce and topped with crushed Doritos. It was awesome. So i'm feeling positive, though Matt Canada could stop that quick.

I made a breakfast sub with scrambled egg, American cheese and mozzarella garlic artichoke flavored chicken sausage.

I go and buy some lean top round and slice it to my desired thickness.
Then for seasoning it goes something like this….
1 lb of meat = 1.5 teaspoons/ cure = 2 teaspoons
2 lb= 1 tablespoon / cure = 1 tablespoon + 1 tsp
3 lb = 1 tablespoon + 1.5 teaspoons / cure = 2 tbsp
4 lb = 2 tablespoons / cure = 2 tablespoons + 2 teaspoons
I bought a shaker so I can mix the cure and seasoning together and add them together. I put my sliced meat in a bowl and add seasoning and cure gradually, mixing as evenly as I can as I go. Put the seasoned meat in a ziplock, get all the air out and seal. Refrigerate for roughly 24 hours.
Then I smoke it at 180 until it reaches the texture I like. I like my jerky more moist, so it doesn’t take a really long time. Just smoke or use a dehydrator until it reaches a texture you enjoy.
I also add more seasoning than the recipe calls for because I like a lot of flavor. For this batch, I used Mackormick’s Grill Mates Brazilian Steakhouse seasoning with 1/4 tsp of dried and ground habanero pepper for a little extra kick.
Try stuff. You’ll be amazed what you can create.

I used Firenza hot sauce. It's Italian, made with Calabria chili peppers. It has tons of pepper flavor but is only medium heat. I like siracha's flavor but to me it's too hot to add as much as i'd like. The Firenza hot sauce is like a half hot siracha.

They use a lot of Calabria seasoned sausage on the pizza in Italian restaurants in Poland. It’s ok I guess.
