From what I can tell, the food is lousy because the hotels and restaurants are owned by the government. They are letting some people open small restaurants in their homes.
Remember, the rest of the world can travel freely to Cuba. It's only us that are not allowed.
Food at some cheap hotels is terrible. At others it is awesome. You get what you pay for. Hotels are developed and paid for by foreigners, with ownership reverting to the state run companies after time periods. They do go down in all aspects, but some have recovered nicely.

And yet many Cubanos are very happy. Simply happy. Many are not, but many are. It is not black and white, and certainly not as portrayed by the Cuban community in Miami.

There are no fish close to shore. Great reefs because of the lack of pollution (see above about resorts without Americans), but the fish get taken to feed the people.
You gotta go way out, or to the southern protected areas.

So Cuba is communist and America hasn't had any influence at all there for decades. It must be a veritable Eden with no income inequality, no gender inequality, workers whistle a tune on their way to work where they do excellent work despite the fact that they make the same salary if they do **** work.
Income equality exists. I have been diving with dive instructors who are qualified brain surgeons, because fat gringos in neoprene tip. In public, gender equality exists, and workers are generally happy; slow like everywhere south, but not unhappy.
I laugh that the biggest argument for continuing the embargo is Cuba's human rights violations... half our country is made in china, who is just as communist and ten times worse on the human rights violations....

The diving also, I think Confluence is a major investor in several Cubano dive shops.
I also think most of the better cigar makers have escaped to the Dominican Republic or Brazil, along with their favorite seed stock. It's been awhile since I have had a Cuban cigar that was good enough to brag about, Miami imports like Oliva and Cibao are even rated better than the Cuban Cohibas.
I can hook you up to dive shops. Don't own, but know Cubanos who have support. Best is Bahia de Cochinos. Fidel lives on the more pristine side. Love it down there, though y'alls might not like some of the clearly evident sentiment on very public display on the drive down.
