I'm in a nursing home but this basically what we follow. Our vaccine fridge is on emergency power. For food we have a 3 day supply of stuff, and in case of an extended outage will have refrigerated trucks come in.

Oh, and as a side note, I have a full house generator for my cabin that will run as long as there is fuel to feed it, propane in my case.

I've lost power for close to 3 weeks before and never had the lights go out. Hospitals can function on back up power longer than short term if they're set up correctly.
