Pre cook it and by cook I mean "bake it in the oven" to get most fat out. I cut it into 1" pieces pre-bake. Then just add regularly in addition to everything else. I'm known to empty the frig when I make chilli sometimes so there is that...............

Try pepperoni.....cut it into 1/4” x 6-8” sticks. Grill them and then cut to small pieces. Throw them in the pot and simmer with everything else.....

Ike, I've never tried that so I'll be trying it very soon. ALSO a very deep TOP SECRET recipee. I add a small JAR of apricot or strawberry jelly and it is amazing what it does for the chilli. The taste does NOT take over but enhances. I've used a 1/4 cup honey but it didn't enhance as well (just put a little sweetness into it). I've heard grape jelly does well also but I'm not a big fan of that. As weird as it may sound, many who have had my chilli are always wanting to know the TOP secret ingrediant. I usually tell them but ON LY in secrecy (LoL).
