I wanted to do this, but given I already dropped 90 on chili and dip ingredients I said nah.

Had some Capocollo last week that was delicious...

Rub. Smoked for 2.5 hours and then finished it in a crock pot. I put very little if any bbq sauce on mine. Just a good grind of sea salt. I want to taste pork, not BBQ sauce.
