Biden Choked the Chickens

I print out Floggy's replies and mulch them in the garden with my tiller.
 
Guy who rents the business condo next door to me has hens, he normally charges $3/doz. They normally start laying in earnest about this time of year in the northeast. Asked what he planned on charging this year, he said price will remain $3/doz because feed price hasn't changed, so egg price will not change.

But I will tell you what does change, his tune.

He brought in his first harvest for sale this week and the price was $4/doz, even though feed prices haven't changed. That's a 33% price hike over what he promised. Even the little guys gouge when they can.

Eh, the cheapest I've seen in a store this week was $6/doz. I wasn't happy, but I'm not paying 50% more to prove it.

When store prices are cheaper than his prices I'll stop buying from him..... what's good for the goose....
 
Here's an egg tip. When making a 3 egg omelette, separate the yolk from 1 egg (or 2) and save it to a separate dish, beat it smooth with a pinch of salt and set aside. Make the omelette with the other eggs as you would normally. When it's just about done, roll it up, pour or brush the beaten yolk over the top then flip and give it a quick fry for a few seconds then flip onto plate yolk side up. Spread some butter on top. It kicks it up the eggy goodness a notch or two.

Do you add cheese in the mixture while it's cooking or near the end?
 
I usually don't add milk to eggs. Sometimes if i have it, I'll add a splash of cream or mix in a bit of sour cream along with salt, pepper and whatever herbs i decide to use. If i'm adding cheese, i do it right at the end just before i roll up the omelette. Sometimes i will do a bit of cream cheese with chives as a filling. I microwave the cream cheese for about 10 seconds to get it warm and almost liquid then I'll spoon it onto the eggs just before i roll it. You should never add anything cold to the eggs while they're cooking. Room temp is fine but not cold.

If I'm doing scrambled, I will just sprinkle the shredded cheese over the top near the end and it melts pretty quickly. Sometimes I'll cover the pan with a lid or more often the plate I'm going to use. It warms up the plate too so the eggs don't get cold immediately.

I always add turmeric to my egg mix. It's supposed to be good for you and it doesn't have a ton of flavor so eggs are a good place to add it. I'm not sure I even taste it in the end. It likes to clump up so you have to mix it in really well.
